This ultra premium West Australian rum distillery is the brainchild of master distiller and founder Codie Palmer.
Codie followed his dream and used his engineering skills to help turn a decade-long obsession into a reality: an all-Australian company producing the finest small batch rum, while keeping all proceeds within the country.
The distinctly local spirits are crafted from 100% natural, Australian-grown ingredients. Rich, dark brown cane sugar is distilled in small batches to form the foundation of the liquor, which is flavoured with indigenous botanicals including Kakadu plum, lemon myrtle, quandong, wild rosella and wattleseed.

LAND & WATER: Based on a farm in the mid-west of Western Australia, the story of Illegal Tender Rum Co is unique to the land it came from.
All water in this part of the world comes from the sky and the collection of soft rainwater is crucial to the final product. Its low salt and mineral content and lack of contaminants differentiates it from ground and spring water employed by other operations.
SUGAR & SPICE: After water, the next most important ingredient in any rum is its sugar source. The majority of the world’s rums employ molasses for this purpose, but molasses contains a lot of impurities as well as just sugar.
Illegal Tender Rum Co opt to use much costlier dark brown cane sugar imported from Queensland in order to reduce impurities and provide a distinctive, smooth, rich and full flavour.
ITRC’s 1808 Barely Legal is an unaged white spirit that’s produced so it can be bottled immediately and retain its fruity flavour.
The spiced variety is barrel aged in ex-shiraz French oak casks and flavoured with a painstakingly perfected proprietary blend of spices.
A selection of Old World spices including nutmeg, cardamom, cinnamon, cloves and orange is used as a flavour base, while indigenous botanicals quandong, Kakadu plum, lemon myrtle, wattleseed and wild rosella complement each other to create a distinctive and delightful flavour profile.
TOURS: Go behind the scenes and get an insight into the passion that goes into each bottle. Tours are conducted on the hour between 11am and 4pm and bookings are essential.
Tours go for 30 minutes, cost $30 per person and include two tastings.
